Ulavacharu Chicken Dum Biryani
This Biryani is a excellent SOUTH INDIAN RECIPE. Even pairs Excellent with Mutton and veg. Cooking this recipe in traditional clay pot method,even Enhances the taste ,color,flavor. Food stays hot for a longer period of time. You can cook even in normal pans with already available horse gram stock( ulavacharu) in the stores.It's a spicy Biryani .

preparation method.
step 1: Soak 1 cup horse gram overnight.
step 2: Next day pressure cook it at least for 8-10 whistles with 3 cups of water.
step 3:soak 1 cup basmati rice for 30 min
step 4: In a pan add 1 lit water, cloves- 6, cumin 5 ,star anise 2 ,bay leaves 5, green 3 and black cardamom 3,nut mug 1, mace 2.
once it gets boiled add soaked basmati rice, cook it 50%.
step-5:
In a thick pan add oil, add whole garam masala seeds, onion-1, green chilies 10, ginger garlic paste-2 tbsp. cook it for 2 min. now add chicken. cook it for 3 min. add salt, red chili powder, coriander,garam masala powder cook it for 5 min let it loose its oil.
step:6 Drain the stock from the cooker. add a pinch of salt, red pepper powder.
step 7:Now pour the stock in chicken add coriander, curry and mint leaves.let it get boiled.(2 min)
step 8: add half cooked rice in the pot in sections.
step 9: add fried onions,coriander, mint leaves,
step 10: Mix saffron 2-3 strings in 4 tbsp milk , and pour it on the rice. you can even top it with ghee 2-3 tbsp(optional)
step 11: close it with foil. cook it in a low flame for 5 min.(Dum)
step 12: Remove foil and serve hot.
